Amazing Raspberry Cordial Party Drink Recipe

For my daughter’s 9th birthday, she decided on an Anne of Green Gables themed party, which inspired me to find fitting treats for the occasion. While searching for ideas, I stumbled upon a recipe for raspberry cordial. I adapted it to suit our needs, and it turned out to be the perfect addition to the celebration! Since I had never made raspberry cordial before, trying my hand at something new was an enjoyable bonus. Not only was it delicious, but it also became a hit among our guests!

Making the raspberry cordial was a breeze, and I appreciated that it offered a healthier alternative to typical soft drinks. Crafted with real fruit, water, and a touch of sugar, it feels like a nod to the healthier choices people made back in Anne’s day. Personally, I loved it and believe it deserves a revival! I’m already planning to whip it up again as a festive treat—perhaps for Christmas or Valentine’s Day, since its vibrant red color is simply perfect for those occasions.

Ingredients

  • 24 ounces frozen raspberries
  • 1 and 1/4 cup sugar
  • 3 lemons
  • 4 cups water

Instructions

  • Combine the raspberries and sugar in a saucepan and cook on medium-high heat until all the sugar has dissolved. Stir constantly to prevent burning.
  • Take a large fork and smash any remaining berry pieces.
  • Pour the syrupy mixture through a mesh strainer into a pitcher.
  • Add in the lemon juice from two of the lemons, and give it a good stir.
  • Boil the water in a separate pot and then add it to the raspberry syrup in the large pitcher.
  • Let the mixture cool for about 20 minutes, and then chill it in the refrigerator overnight.
  • Slice the remaining lemons to float in your serving container.

Notes

  • This is best prepared the day before to allow for plenty of time to get it cold in the refrigerator.
  • This recipe can easily be doubled or even tripled. Just make sure your pots and pitcher are large enough!
